Yellow Box

It's a shoe box.  A Yellow Box shoe box to be exact!

          One of these things is not like the others,
          One of these things just doesn't belong,
          Can you tell which thing is not like the others

These are my Yellow Box sandals...all except for one pair which is a different brand (the ones with the square crystals!)  although, you may not be able to tell which ones are yellow box anyway...because some are older and have  the sunflower logo is worn away.  The leopard ones and the black ones are my oldest and dearest (I haven't even seen the leopard ones in store anymore!), the red ones are my newest!  (Can you tell I love these?  They're all I wear in the summer!)

And...if I get the chance, I'll be buying a new pair Saturday! (Maybe  hounds tooth or a bronze-colored pair!)  Because...there's a SALE!  A local department store is having a Charity Sale 6am-10pm, Saturday morning (ugh...so early!)  But...Woohoo!

Have you noticed that when I don't have a lot to blog about I write about shoes?  or animals?  or food? (not today!) or flowers?

I bought a timer yesterday for my water because I'm going to Louisiana next week.  My sister and brother-in-law will be in for R&R from Iraq (they work for a contractor over there).  We're all hoping they get in!  There seems to be a problem with the charter plane service.  Love you, sis!  Hope it all gets worked out before Sunday.  They're also suppose to be coming to my house...yipee!  And...I'll also get to see my mom, my brothers and their wives (Hey, ya'll!) and their families!  And...'Bama Dad is flying into La. to meet me...wish I was flying, it's a 10 hour drive from here!

Oh!  Speaking of 'Bama!  'Bama Girl is in Chicago with the University of Alabama's Psychology Department.  She's presenting a paper (or poster?) at the Psychology conference and will be there until Sunday.  Be careful, 'Bama Girl!  I mean it!!

I have no shame...

and I'm tired.  I've cleaned house and cooked ALL DAY.  That's why I'm showing these pictures...'cause I have no shame!  And it looks like I've never cleaned my kitchen!  But I know better!

Why have I cooked and cleaned so much?  'Cause...

'Bama Dad comes home tonight.    If I do all this ahead of time, then I can spend the time we have together....well, together.  Not cooking and cleaning.                                 

Also...'Bama Girl and 'Bama Fiance are coming home.  Did I tell you Fiance got into Law School?  Full ride, too!  Yay!

So...since they are coming, I'm cooking.  Did you know college students have no money?  Did you know they never eat?  Or if they do, it's Ramen Noodles?

Pimento Cheese

I'm fixin' to make some puh-minnuh cheese.  Yeah, you heard me right...fixin' to!  And here in the South we call it puh-minnuh.  It's pronounced like those lil' thangs you put on a hook when you go down to the pond to catch a big 'un...you might know them as minnows.   But we call 'em minnuhs and what I'm fixin to make is said the same way but with a puh in front of it...puh-minnuh cheese!  We also don't call it pimento cheese spread...I guess we dropped the spread 'cause...we know it spreads!  (From hip to hip! LOL)

Now, for a little background, every good cook in the South has a recipe for pimento cheese...usually a family recipe that has been tweaked and fussed over.  Anyway, the following recipe is the one I use.  The pecans are optional, but really make a difference so...if ya got 'em, use 'em!  Also, using really good mayo is a must!  And we won't even discuss how to grate the cheese...it's a personal thang!  I use a box grater and grate the extra sharp on the small holes of the grater and the sharp cheese on the larger ones.   Make sure you use both sharp and extra-sharp!  And if I'm feeling spicy...I add 1/2 cup chopped jalapeno peppers (pickled).

                                                   Puh-minnuh Cheese

Ingredients

  • 1 1/2  cups  mayonnaise
  • 1  (4-oz.) jar diced pimiento, drained and coarsely chopped
  • 1  teaspoon  Worcestershire sauce
  • 1  teaspoon  finely grated onion
  • 1/4  teaspoon garlic powder
  • 1/4  teaspoon  ground red pepper
  • 1  cup  chopped pecans, toasted
  • 1  (8-oz.) block extra-sharp Cheddar cheese
  • 1  (8-oz.) block sharp Cheddar cheese

Make the mayo mixture:  Stir together mayonnaise, diced pimiento, Worcestershire sauce, grated onion, garlic powder and ground red pepper until blended.

Add pecans and shredded cheeses to mayo mixture, stirring until blended.

This can be stored covered in fridge for up to a week.  Eat with crackers, celery, or with white bread as a sandwich!

**To toast the pecans:  Preheat oven to 350°.   Bake pecans in a single layer in a shallow pan 8 to 10 minutes or until toasted, stirring halfway through to prevent burning and to allow the nuts to become brown evenly.

NOT!  It's way, way too cold for me!  I need the water temp to be about 80-85 degrees...right now, it's 72!  (Although the near 90 degree air temperatures have made it tempting!)

A little bit of Roll Tide and Mama Pride!

'Bama Daddy and I went down to Tuscaloosa today for Honor's Day.

First we went to the Psychology Department for a luncheon and awards program, where 'Bama Girl received this:

Mailboxes and yellowboxes

I went out this morning and this is what I found laying in the ditch:

Yep...someone was playing mailbox baseball...and I lost!

Cute, huh?  I love Yellow Box flip flops, but have never had any of their other shoes.    These are the Cindy's.  And I tried on another pair that I really, really, really want...the Debbie's.  But I had to make a choice and Ineeded these to wear this weekend.  (I'm not sure how much walking we'll have to do...I'm putting my flip flops in my purse!)  Oh!  Have I told you about that?  No?  Okay....

Well, this weekend we're going to the Tapping on the Mound Ceremony at the University of Alabama.  'Bama Girl is being tapped into the Mortar Board Society.  It's an honor society.  She was one of 65 chosen...I'm so proud!  And...we've also been invited to a luncheon for those getting Psychology honors...and she's one of those!  We're really excited for her!  And we get to see her!  Yay!  I'm thinking that she needs a little bit of mothering...she's very, very stressed!  ((hugs, 'Bama Girl!))

Mother Nature and I...BFF's again!

Since I spent much of my days complaining  about the snowy, colorless, landscape of my life this winter, I decided to pay Mother Nature back with a few pictures of the color of spring.  Although it's a tad premature, I needed to go  walking  in the green-ness!

Oh...and let me destroy these images!  When I walk outside?  It smells like chicken poop...old chicken poo...yuck!  Someone down the road is tearing an old chicken house down and when the wind blows just right...the fragrant perfume of chicken poopy!

Even Chance and Cheddar were disgusted!  Only someone who lives in the country can appreciate this.
